Ingredients

  • 2 medium/large courgettes
  • 80 grams of cooked quinoa
  • 30 grams of chickpea flour
  • 80 grams of breadcrumbs
  • Extra virgin olive oil
  • Salt
  • Aromatic herbs (mint and basil)

Instructions

With this recipe, you should be able to make about 12 zucchini balls.

Step 1

Cook the courgettes in a pan with a drizzle of oil and the aromatic herbs until they are very soft. In the meantime, boil the quinoa based on the packaging recommendations.

Step 2

In a large bowl add all the ingredients and mix with a fork until it forms a malleable dough. If too sticky, add flour or breadcrumbs.

Step 3

Form the zucchini balls of the shape you prefer, pass them in the breadcrumbs and brown them in a pan on both sides for about 5 minutes.

Step 4

Arrange the zucchini balls on a plate on top of the quinoa. Below, you can find a slightly different simple recipe with eggs and normal flour where you don’t have to cook the zucchini but simply grate them.
