Simple Shakhtar Potato Soup

Ingredients
- 4 medium-sized potatoes
- 1 large leek (only use the white and pale green part)
- 2 table spoons of oil (e.g. olive, sunflower)
- 3/4-1 liter vegetable broth
- Salt and pepper
- 200g salmon filet or the same amount of (vegetarian) sausage
- 100 ml cream
- Some parsley
Instructions
Step 1
Peel and dice the potatoes. Wash the leek, cut it into rings and cook it in the oil.
Step 2
Add the diced potatoes to the leek and add the vegetable broth.
Step 3
Once the water is boiling, let everything simmer on a medium heat for 10 minutes. Then, turn off the heat and blend everything with a stick blender. Add some salt and pepper.
Step 4
Turn on the heat again, dice the salmon or cut the (vegetarian) sausage in small pieces and add them to the soup. Let it simmer for five minutes on medium heat again.
